Chewy Molasses Cookies Recipe

Ingredients:

2 1/2 c. flour
1 1/2 tsp. soda
1/2 tsp. salt
1 tsp. cinnamon
1 tsp. ginger
2/3 c. soft shortening
1/2 c. sugar
1 egg
1/2 c. molasses
1/2 c. buttermilk

Directions:

  • Mix all ingredients and drop by spoonfuls onto a greased cookie sheet. 
  • Bake at 350 degrees for approximately 15 minutes.  Cool and enjoy!

Maple Walnut Fudge Recipe

Perfect for fall!

Ingredients:

4 c. sugar
1/2 c. butter
3/4 c. maple syrup
1 c. milk
1 c. minature marshmallows
1 1/2 c. chopped walnuts
1 tsp. vanilla extract

Directions:

  • Mix together the sugar, butter, maple syrup, milk, and marshmallows in a large saucepan, cooking and stirring until the mixture forms a string when you lift up the spoon.  This usually takes about 20 minutes. 
  • Remove from heat and cool.
  • Grease a 9-inch square pan. 
  • Add the nuts and vanilla to the fudge mixture and stir until the mixture starts to harden around the edges of the pan. 
  • Pour into greased pan. 
  • Cool and cut into squares.

Chocolate Chip Meringue Drops Recipe

 
Ingredients:

2 large egg whites
1/2 cup white sugar
1 teaspoon vanilla extract
3 tablespoons unsweetened cocoa powder
1/2 cup semisweet chocolate chips

Directions:
  • Preheat oven to 250 degrees and line 2 baking sheets with aluminum foil or parchment.
  • In mixer, beat the egg whites at moderately high speed until they form stiff peaks. 
  • Beat in the sugar one tablespoon at a time
  • Add the vanilla extract. 
  • Reduce mixer speed to low and add the cocoa powder.
  • Fold in the chips.
  • Drop mixture by the teaspoonful onto baking sheets.  Space one inch apart.
  • Bake for one hour.
  • Turn off oven and allow cookies to dry in the oven for two hours.
  • Store in airtight container.
Makes approximately 40 cookies

Old Fashioned Sugar Cream Pie Recipe

 
An old fashioned favorite!

Ingredients:

1 c. sugar
5 tbsp. flour
1 pt. whipping cream
1 unbaked 9 inch pie shell
Pinch of salt
Cinnamon

Directions:
  • Heat whipping cream over medium heat.  Do not boil.  
  • Add to sugar and flour mixture slowly. Add salt. 
  • Pour into the 9-inch pie shell and sprinkle cinnamon on top. 
  • Bake at 450 degrees for 10 minutes, then at 350 degrees for 30 minutes, or until set.

Cranberry Swirl Coffee Cake Recipe

My mom made this every Thanksgiving and Christmas.  It's one of my favorites.

Ingredients:
  • 1/2 cup butter
  • 1 cup white sugar
  • 2 eggs
  • 1 teaspoon almond extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup sour cream
  • 1 (8 ounce) can whole cranberry sauce
Directions:

  1. Preheat oven to 350 degrees.  
  2. Grease and flour a 9 or 10-inch tube pan.
  3. In a large bowl, cream together the butter and sugar until light and fluffy. 
  4. Beat in the eggs one at a time.  Stir in the almond extract.
  5. Combine the dry ingredients.  Stir into the creamed mixture, alternating with the sour cream.
  6. Pour 1/3 of the batter into the prepared tube pan. Swirl half the cranberry sauce into the batter. Repeat process, ending with batter on top.
  7. Bake 55 minutes until golden brown.  Cool.  Empty onto serving dish.

Buckeye Candy Recipe


 
     Candy Ingredients:
1 stick softened butter
1 3/4 c. (1 18 oz. jar) creamy peanut butter
1 tsp. vanilla
About 1 lb. confectioners' sugar
 
Chocolate Coating Ingredients:

1 (12 oz.) pkg. semi-sweet chocolate chips
1 tbsp. vegetable shortening
 
Directions:
  • Cream butter, peanut butter, and vanilla together, adding confectioners' sugar until the right consistency is reached. 
  • Roll candy into 1-inch balls and place on a wax paper-lined cookie sheet. 
  • Melt chips and shortening together in the top of double boiler, and keep the chocolate mixture in the double boiler over low heat while dipping the candy. 
  • Using toothpicks, dip each ball into the chocolate mixture, covering 3/4 of candy. 
  • Place candy on the cookie sheet to cool.
Makes about 8 dozen pieces.

Grandma's Pecan Pie

Ingredients:

4 eggs
1 1/4 c. southern cane or dark Karo syrup
1 1/2 c. broken or whole pecans
1 c. sugar
4 tbsp. butter
1 tsp. vanilla

Directions:
  • Boil sugar and syrup together for 2 to 3 minutes. 
  • Beat eggs, not too stiff. 
  • Pour the hot syrup mixture in slowly, stirring constantly. 
  • Add butter and vanilla. 
  • Place the pecans in the pie shell and pour syrup mixture over the top. 
  • Bake in 350 about 45 minutes or until set.

Strawberries and Cream Surprise Recipe

 
Ingredients:

2 pkg. strawberry Jello
2 c. boiling water
2 (10 oz.) pkg. frozen strawberries
1 (13 1/2 oz.) can crushed pineapple, undrained
2 lg. bananas, diced
1 c. dairy sour cream

Directions:

  • Dissolve the Jello in boiling water, then add strawberries, stirring occasionally until thawed. 
  • Fold in pineapple and bananas. 
  • Put half of mixture into an 8- inch square pan and chill until firm. 
  • Spoon sour cream over evenly. 
  • Pour remaining Jello over top and let chill in the refrigerator until set.
