Dainty Lemon-Pecan Cookies Recipe

Ingredients:

3/4 c. butter
1 tsp. grated lemon peel
1 c. granulated sugar
1 egg
1 tbsp. lemon juice
2 c. all purpose flour
1 tsp. baking powder
1/2 tsp. salt
1 c. finely chopped pecans

Directions:

  • Cream butter and sugar 
  • Add 1 egg, lemon peel and lemon juice. Beat well. 
  • Sift together the dry ingredients and add to the creamed mixture, mixing well. 
  • Stir in pecans. 
  • Shape into 2-inch rolls.
  • Wrap in wax paper and chill thoroughly. 
  • Slice very thin and place on ungreased cookie sheet. 
  • Bake at 350 degrees for 10 to 12 minutes. 
  • Cool a few minutes before removing from the cookie sheet. 
Makes 5 dozen

Peanut Butter Muffins Recipe

Ingredients:
2 c. sifted flour
3 tsp. baking powder
1 tsp. salt
1/4 c. sugar
1/2 c. peanut butter
1 egg
1 c. milk
1/2 c. raisins

Directions:

Bake in a muffin pan at 425 degrees for 15 minutes.  Makes a dozen muffins.

Hawaiian Banana Bread Recipe

  Ingredients:

  • 3 cups plain flour
  • 2 cups sugar
  • 1 tsp. baking soda
  • 1 tsp. cinnamon
  • 1 cup chopped nuts (walnuts, pecans or macadamia)
  • 2 tsp. vanilla
  • 3 eggs, beaten
  • 1 1/4 cups vegetable oil
  • 2 cups mashed bananas
  • 1 (8 oz.) can of crushed pineapple (well drained)

Directions:

  • In a large mixing bowl combine flour, sugar, baking soda, and cinnamon.  Stir in nuts and set aside. 
  • Combine remaining ingredients in another bowl and blend well.
  • Pour wet mixture into dry mixture and stir until moist. 
  • Pour into 2 greased and floured loaf pans. 
  • Bake at 350° for about 1 hour and 30 minutes. 
  • Loaves are done when a toothpick inserted in the center comes out clean.
  • Cool before removing from pan.

Pots de Creme au Chocolat Recipe

This sounds delish.  It's from Cooks.com.
Ingredients:
2/3 c. semi-sweet chocolate chips
1 c. half and half
2 eggs
3 tbsp. sugar
Dash of salt
Whipped cream for garnish
Directions:
  • Preheat oven to 350 degrees. 
  • Heat chips and half and half, stirring constantly until smooth. Cool slightly. 
  • Beat remaining ingredients; stir into chocolate mixture. 
  • Pour into 4 ungreased 6-ounce custard cups or pot de creme cups.
  • Place cups in baking pan on oven rack. Pour boiling water to within 1/2 inch of tops of cups. 
  • Bake 20 minutes. Cool slightly. 
  • Cover; refrigerate 4 hours. 
  • Garnish with whipped cream. 
Yield: 4 servings.

Blueberry-Lemon Bread Recipe

Ingredients:
 
6 tablespoons butter, softened
1 cup sugar
2 eggs
1 1/2 cups pastry flour
1 tablespoon baking powder
1/4 teaspoon salt
1/2 cup milk
1 1/2 cups large fresh blueberries
1 tablespoon grated lemon rind (yellow only)
2 teaspoons freshly squeezed lemon juice

Directions:

  • Cream together butter and sugar. 
  • Stir in eggs and mix to combine.
  • In a separate bowl, mix flour, baking powder and salt. Stir with a fork until well mixed.
  • Mix flour mixture slowly into butter and egg mixture.
  • Stir in milk and remaining ingredients. DO NOT OVER MIX.
  • Bake in a greased loaf pan  at 350 degrees for 50 to 60 minutes. 
  • Sprinkle with sugar

Bittersweet Chocolate Fruit Dip Recipe

Ingredients:

1 1/2 c. ricotta cheese
1/4 c. plus 2 tbsp. unsweetened cocoa
1/4 c. strong coffee
1 tbsp. instant coffee
6 tsp. sugar
2 tsp. vanilla
2 tsp. brandy (optional)
Pinch of salt

Directions:

Blend ricotta cheese in blender until smooth, then add all remaining ingredients. Chill. Serve with apple or pear slices, strawberries, bananas or any choice of fruit.

Chewy Apple Cinnamon Bars Recipe

Ingredients:

1/2 cup margarine, softened
1 cup firmly packed light brown sugar
2 eggs
3 (1 and 1/4-oz.) packages Mix 'n Eat CREAM OF WHEAT Cereal (Apple Cinnamon Flavor)
2/3 cup all-purpose flour
2 tsp. baking powder
1 cup finely chopped walnuts

Directions:

  • Preheat the oven to 350 degrees.  
  • In a large mixing bowl, combine the margarine and brown sugar.  Beat until creamy.  
  • Beat in eggs to a light, fluffy consistency.  
  • Stir in the cereal, flour, and baking powder.  
  • Mix in the walnuts.  
  • Spread the batter into a greased 13 X 9-inch baking pan.  
  • Bake for 25 minutes or until golden brown.  
  • Cool completely and cut into bars.  
Makes about 4 dozen bars.
