2 large egg whites
1/2 cup white sugar
1 teaspoon vanilla extract
3 tablespoons unsweetened cocoa powder
1/2 cup semisweet chocolate chips
Directions:
- Preheat oven to 250 degrees and line 2 baking sheets with aluminum foil or parchment.
- In mixer, beat the egg whites at moderately high speed until they form stiff peaks.
- Beat in the sugar one tablespoon at a time
- Add the vanilla extract.
- Reduce mixer speed to low and add the cocoa powder.
- Fold in the chips.
- Drop mixture by the teaspoonful onto baking sheets. Space one inch apart.
- Bake for one hour.
- Turn off oven and allow cookies to dry in the oven for two hours.
- Store in airtight container.
