Ingredients:
- 3 cups plain flour
- 2 cups sugar
- 1 tsp. baking soda
- 1 tsp. cinnamon
- 1 cup chopped nuts (walnuts, pecans or macadamia)
- 2 tsp. vanilla
- 3 eggs, beaten
- 1 1/4 cups vegetable oil
- 2 cups mashed bananas
- 1 (8 oz.) can of crushed pineapple (well drained)
Directions:
- In a large mixing bowl combine flour, sugar, baking soda, and cinnamon. Stir in nuts and set aside.
- Combine remaining ingredients in another bowl and blend well.
- Pour wet mixture into dry mixture and stir until moist.
- Pour into 2 greased and floured loaf pans.
- Bake at 350° for about 1 hour and 30 minutes.
- Loaves are done when a toothpick inserted in the center comes out clean.
- Cool before removing from pan.
