3/4 c. butter
1 tsp. grated lemon peel
1 c. granulated sugar
1 egg
1 tbsp. lemon juice
2 c. all purpose flour
1 tsp. baking powder
1/2 tsp. salt
1 c. finely chopped pecans
Directions:
- Cream butter and sugar
- Add 1 egg, lemon peel and lemon juice. Beat well.
- Sift together the dry ingredients and add to the creamed mixture, mixing well.
- Stir in pecans.
- Shape into 2-inch rolls.
- Wrap in wax paper and chill thoroughly.
- Slice very thin and place on ungreased cookie sheet.
- Bake at 350 degrees for 10 to 12 minutes.
- Cool a few minutes before removing from the cookie sheet.
